When Manual 3 talks about a ULN2003 in the unipolar stepper motor interface section, is this the IC it's talking about?

Precisely. It uses the ULN2003 and it's outputs to control the stepper motor via the darlington's (ULN2003) inputs.

And the one sold at futurlec is exactly the same model. You can also go to the ULN2803A in should you need an extra driver
